Really depends on the car. I normally use dry ice and a square edged hammer first. Sometimes the melt sheets will come off easily (Mazdas) sometimes it'll leave a residue (BMW's). Other times I'll use an air hammer and a wide chisel w/the ice (Neon) and then have to scrape afterwords and clean up with mineral spirits.
Other times the flat chisel and air hammer usually work. The Fox body mustang I just finished had half of the sheets come off BY HAND... the rest was air chisel.
I rarely use heat.

A heat gun and a putty knife. Then some solvent to get the residual.

Air chisel with rounded corners so you don't cut the floor pan like I did. Then drape the residual with blue shop towels. Soak them with mineral spirits and go drink a couple of beers while it does its thing. Wipe up the remainder and wash it all off with purple clean. Clean again with paint prep and shoot it.

I used one of those small propane torches and a putty knife on my rabbit, probably the same as a heat gun just a little faster in thick spots
