So what's the difference between the mechanical temp gauges for oil temp and water temp?
Just the name on the gauge? can they interchange?

IIRC the sensors on my Autometers looked identical, it was only the faceplates that are different (name on the plate and temp range).

As Mark has pointed out, in many cases a guage with a wider range is required for oil temp. Highly dependent upon engine, oil cooler setup, etc... but you could very possibly peg out some water temp guages if used in an oil temp application. In my car, the water temp guage is 100-240F and the oil temp guage is 100-340F.
