Don't have my 03 GCR handy, nor the 04 GCR yet.

Are swaybars open in the sense that a straight speedway torsion type bar (possibly with blade adjustable ends) may be used in place of the stock-type aftermarket bars?

Yes, as long as the bar does not also perform a prohibited function. I've seen several cars in the SEDIV with that kind of anti roll bar.
