rotary operating temps

Lately I've heard differing opinions on how hot a rotary can run w/o damage, so what do you think? At what water and oil (pan or "hot" side) temps do you back off?

Absolute limits are going to differ depending on equipment but:

We have seen 240 water and 280 oil (Mobil 1) without damage. These temps occured after an off couse and complete splitter destruction along with close proximity to cars we were in pursuit of...

Regulr op temps shouldn't exceed 210/230 in the hottest weather with a decent cooling setup. Most run under 200.
