The only one worth having - for race purposes, is the '90 Prizm GSi (with a "5" as the 8th digit of the VIN). It has the small-port Toyota 4AGE motor, which is a screamer (base for the Atlantic). I've never seen one racing, but they are fairly rare even on the street. I heard there was one in CenDiv that was bloody fast in a straight line.
Being as how I absolutely love the 4AG motors, I've seriously thought about getting one and building it. Getting suspension parts shouldn't be that tough - after all, it's a Corolla. I also think they may be a little short on brakes, but I'm not sure.
I'd say go for it! And let us know. I seriously believe that properly developed, they could be the car to beat in ITB. (And if you do - I have a deal on an ultra-rare LSD for the transaxle. http://Forums.ImprovedTouring.com/it/smile.gif )
